The Holidays were crazy…work has been unforgiving…and we’ve been traveling, or in meetings, or writing lectures, or entering applications, or walking Cleo, or really almost anything…except cooking. However, last night marked our return to cooking. Shepherd’s pie…a comfort food favorite of mine was on the menu. It was pretty standard…except it was beef and not lamb, cooked up with onions, mushrooms and carrots; oregano, rosemary, sage and thyme…and of course topped of with loads of mashed potatoes.
